Ingredients
2 cups Short Grain Rice for Sushi
1/2 cup coconut milk
2 tbsp granulated sugar
1 tsp vanilla extract
1 lb strawberries, hulled and sliced
2 kiwis, peeled and sliced into half-moons
1/2 can (11 oz can) mandarin oranges, drained
4 tsp black and white sesame seeds, toasted
1 tbsp grated lime zest
Instructions
A fun and sweet twist on a Japanese classic, these fruit sushi rolls are fun and delicious for everyone in the family. Step 1
Cook rice according to package directions. Using rubber spatula, gently stir in coconut milk, sugar and vanilla. Let cool completely. Step 2
On work surface, lay 11- x 10-inch rectangle of plastic wrap. Spread about 1 cup of rice into 9- x 8-inch rectangle in center of plastic wrap, pressing with fingertips to form thin, even layer. (If rice is too sticky, dip your fingertips in bowl of water.) Step 3
Starting 1 inch from one short edge, lay pieces of fruit over rice in straight line. Using plastic wrap as a guide, roll edge closest to you over the filling as tightly as possible; continue rolling to form roll. Wrap in plastic wrap. Repeat with remaining rice and fruit. Step 4
Remove plastic wrap; slice each roll into 1 1/2-inch pieces. Sprinkle with sesame seeds and lime zest. Alternatively, make free-form sushi by rolling and shaping 2 tbsp rice into balls, triangles or squares. Stuff piece of fruit into center or top with fruit. Sprinkle with sesame seeds and lime zest. Recipe Tips Change up the fruit depending on the seasons. Try mango, peaches, cantaloupe, pineapple or star fruit. For a fun presentation, serve fruit sushi with shaved melon to resemble wasabi and pickled ginger, and melted chocolate or fudge sauce to resemble soy sauce for dipping.
