Summer is a great time for your solar panels to soak up energy from the sun and power your summer activities. It's also a great way to fund staying cool in the summer while being Climate Change conscious.
Summer is also a great time for light meals that include little cooking such as salads and sandwiches. Start with the below salad and share with us your favorite no bake or little bake//cook recipes.
Chicken & Strawberry Honey Dijon Salad
1 1/2 Cups Fresh cut Strawberries
1 Large Chicken breast sliced
3 Cups rinsed and dried Spinach
1/2 Cup Water chestnuts
1 Cup Dijon Mustard
1/2 Cup Honey
Instructions:
In a salad bowl place your spinach, chicken, strawberries and water chestnuts and toss together. In a separate small bowl mix the Dijon mustard and honey together. Add dressing to salad and toss. Serve and enjoy.
