Cooking Series: Potatoes with Lemon Balm (2 ways) Recipes

OVEN ROASTED Potatoes with Lemon Balm

Course Side Dish

Ingredients

  • Oven Method

  • 1 kg approx 2 pounds baby potatoes

  • or Yukon Gold for example, but cut into good sized chunks

  • ½ cup best olive oil

  • sea salt + fresh ground pepper to your taste

  • fresh picked lemon balm leaves

  • if no lemon balm, substitute with parsley or any mint, oregano or your favourite herb

Instructions

  1. Preheat oven to 350 degrees.

  2. Cut the potatoes in to bite-sized pieces.

  3. Spray olive oil or add a teaspoon of olive oil to a parchment paper lined cookie sheet

  4. Add the potatoes.

  5. Season with fresh ground black pepper and sea salt

  6. Bake for 50- 60 minutes. Check every 20 minutes and flip with spatula for even baking.

  7. Remove from oven and move potatoes to a large bowl.

  8. Allow to cool a little (maybe 3-5 minutes)

  9. Pick your lemon balm. Pull off the leaves and chop. Compost the stems.

  10. Add the chopped/minced lemon balm to the potatoes. Toss.

  11. Spoon or ladle onto your serving plate.

  12. ENJOY !!!!!

 

Stove Top Extra Special Potatoes with Lemon Balm

Course Side Dish

Ingredients

  • 1 kg approx 2 pounds baby potatoes

  • Salted water to cover

  • 3-4 tablespoon butter or good quality olive oil

  • sea salt + fresh ground pepper to your taste

  • fresh picked lemon balm leaves if no lemon balm, substitute with parsley or any mint, oregano or your favourite herb


Instructions

  1. Add the potatoes to a medium saucepan and cover with cold water by 2 inches.

  2. Bring to a boil and add about 1 teaspoon of sea salt.

  3. Reduce to a simmer and cook until the potatoes are fork tender (about 15-20 minutes)

  4. Drain the water from the pot.

  5. Add the butter to the pot and stir into the potatoes

  6. Add the chopped lemon balm leaves

  7. Season with sea salt and freshly ground black pepper

  8. Mix well


Recipe Notes

After making this dish a few times, I've found that it's even better if the butter, herbs, and S & P are left to 'marry' a little before serving, it tastes, EVEN more scrumptious.With this in mind, allow to rest with lid on the pot for a few minutes before serving
